Cook a Slow Meal, on Purpose: The 15-Minute Hygge Moment

When did you last cook something that simply could not be rushed?

So much of our cooking is a race against the clock. Fish fingers in the oven, pasta on the boil, something from the freezer while everyone asks when tea will be ready.

This week, why not take 15 minutes for a little hygge moment and cook a slow meal, on purpose? Pick a stew, a casserole or a pot of something that bubbles away for hours, and spend 15 unhurried minutes getting it started.

The slow cooker counts.

Make it cosy

Turn the kitchen into somewhere you want to be:

  • A simple recipe that does most of the work by itself
  • Your heaviest pot or casserole dish
  • A clear worktop and a sharp knife
  • The radio or a favourite album playing softly
  • A cup of tea or a small glass of something nice to sip

Your 15 minutes of chopping and stirring

  • Lay it all out. Put every ingredient on the side before you begin.
  • Chop slowly. Onions, carrots, celery. Enjoy the rhythm of the knife.
  • Soften gently. Let the vegetables sizzle on a low heat until they smell sweet.
  • Add the rest. Stock, tins, herbs, whatever your recipe asks for.
  • Lid on, walk away. Let time do the cooking for you.

Slow it right down

Slow cooking is not about being a brilliant cook. It is about choosing patience for once, and letting dinner be something you look forward to all afternoon.

As you cook, try to notice:

  • The smell of onions turning golden
  • The steam fogging up the kitchen window
  • The quiet, steady bubble of the pot
  • How the whole house starts to feel warmer

Finish gently

When it is ready, serve it in deep bowls with crusty bread, and sit down to eat it properly.

You could also:

  • Make double and freeze a portion for a busy night
  • Keep one Sunday a month for a slow-cooked dinner
  • Ask your mum or nan for a stew she used to make
  • Let the children stir and choose the herbs

Do keep an eye on anything left on the hob, and never leave a pan unattended on a high heat.

Your 15-minute challenge

This weekend, give yourself 15 minutes.

Choose a slow recipe. Chop your vegetables. Put the lid on the pot.

Then let it simmer while the kitchen fills with something wonderful.

It does not have to be a fancy dish. It does not have to be a family recipe.

It just has to be this weekend.

Good things are worth waiting for.
